Episode 47 Pasta Carbonara, Authentic Style
Total Time: 30 minutes
Servings: 4
Ingredients:
o 4 ounces thick-cut bacon/pancetta/guanciale cut into 1/2’” strips or diced
o 8 ounces pappardelle pasta
o 1 whole egg
o 2 egg yolks
o Parmigiano-Reggiano cheese
o Black pepper
Instructions:
o Toast coarse-ground black pepper in frying pan … set aside … let pan cool
o In same pan, cook meat from a cold pan until crispy but not burnt … Remove meat from pan and set aside
o Whisk whole egg and two yolks in a medium bowl
o Add a good amount of grated cheese and toasted pepper, whisk together until creamy, paste-like consistency
o Cook pasta for 2-3 minutes until “al dente”
o Add cooked pasta to the grease remaining in the pan where it will finish cooking … add some pasta water as needed … toss
o BE CAREFUL WITH TEMPERATURES SO AS NOT TO SCRAMBLE THE EGGS!
o Add cooked pasta to the egg/cheese/pepper sauce … toss to cover
o Top with crisped meat pieces, toasted pepper, and more cheese
