Let’s Cook With Mike: Episode 46 Pappardelle Alla Abruzzo (Ristorante il Vecchio Mauro, Sulmona, Italy)

“The Sauce” Ingredients:

o 1⁄4 cup olive oil (extra virgin)

o 4 garlic cloves, smashed

o 1⁄2 onion, diced small

o 6 basil leaves

o 2 large tomatoes

o 1 pint grape tomatoes

o 1⁄4 cup red wine

o 1⁄2 cup vegetable broth (add more, if necessary)

o 8 ounces pappardelle pasta

o Fresh grated parmesan cheese

o Salt & pepper to taste

 

Instructions:

o Cook vegetables in oil 3-5 minutes … Add wine to reduce

o Core and quarter large tomatoes … Add these and grape tomatoes to vegetables

o Add vegetable broth … Simmer for 5-7 minutes

o Remove skin from large tomatoes (simply using tongs)

o Remove basil stems, tear leaves into small pieces, add to mixture … Set aside

 

“The Meat” Ingredients:

o 1⁄2 pound lamb, diced small

o 1⁄2 pound of ground beef and veal blend

 

Instructions:

o Heat small amount of olive oil in separate pan

o Add meat and sauté until completely cooked

 

 

“The Dish” Instructions o Heat water to a rolling boil … Add pappardelle pasta and cook until “al dente”

o Blend or puree vegetable mix to be chunky … Add pureed vegetable sauce to meat

o Add cooked pasta to meat and vegetable mix …Toss

o Top with fresh grated Parmesan cheese
